He is first and foremost chef of BAUTZUID, entrepreneur and Masterchef of this years edition. Michiel van der Eerde is not only talented, it’s a really cool guy. With the passion he attained when he was younger because he always took a sneak peek into every restaurants kitchen. Those chefs told him: “It’s hard work being a chef” trying to scare him. They only motivated him more and more! Little did they know.
Michiel recommends his 10 favorite restaurants:
My definite number one that I visit a lot is Umeno. This Japanese restaurant is situated in the middle of a residential area. They serve a high quality of Japanese food, it’s truly outstanding. My favorite dish is seared tuna with shiso and spring onions with a sweet soy finishing.
Envy is a restaurant that’s recommended a lot by other chefs! Guillaume and Freek love Envy, just like Michiel. “Chef Michael Wolf* is a very talented guy. Funny fact is that I hired Guillaume at Envy. You taste Guillaume’s experience at Envy in his dishes at Daalder”. Envy creates dishes with a beautiful mix of lightness and flavours. Delicious! *Michael Wolf recently opened his own restaurant: Atelier Wolf.
Not in Amsterdam, but on a wonderful spot at Kaageiland. Tante Kee is a classic restaurant where you just have to go someday. No words needed.
Ever wondered where this chef gets his Chinese cravings settled? His favorite is New King on the Zeedijk in Amsterdam! What he orders? Too much!
The restaurant of Hotel l’Europe Bord’eau is a Michelin star restaurant and serve haute cuisine on a high level. A real treat to sit at a table and enjoy the service and dishes.
Restaurant Het Bosch is one of my favorite because they understand how to service guest and how to prepare food. Their cuisine is divine. Plus it has a magnificent view over Het Nieuwe Meer and owner Ferry is a really passionate guy.
Izakaya Asian Kitchen & Bar has everything you need: From a top chef, delicious small dishes and great cocktails on the side. Perfect for a night with your lover but also for an uptown feel when you want to drink cocktails.
The first restaurant of many that Michiel loves visiting when he’s abroad: The Jane in Antwerp! Michiel comes here as often as he can, also because of his good relation with chef Nick Bril. The location is perfect in an old church in Antwerp. The combination of ingredients and flavours is excellent.
L’Atelier de Joël Robuchon in London is an unique restaurant with an even more unique chef. Joël Robuchon is awarded ‘Chef of the Century’ by the Gault Millau guide and operates a dozen restaurants in cities such as Paris, Tokyo, New York, London and Hong Kong. His restaurants have garnered a total of 25 Michelin stars – more than any other chef in the world! Michiel about Robuchon: Try to sit at the bar here and enjoy the small dishes of a haute cuisine quality!
“This is one of my favorite restaurants abroad: Restaurant Frantzén in Copenhagen” says Michiel in our interview. And he’s not going to explain why. It’s a two Michelin star restaurant, you just have to experience it and sit at the bar. The entire atmosphere is fantastic. You’ll love it!
For whomever haven’t tried his dishes at BAUT or BAUTZUID. Go shame yourself.. Or immediately make a reservation. And say HI for me.
XX, Michelle
