BAUTZUID by Michiel van der Eerde

From BAUT AMSTERDAM to BAUT ZUID! Chef Michiel van der Eerde is here to stay. After the highly successful period in Amsterdam Oost, he and his (kitchen) crew now set foot in Amsterdam Zuid. The official opening was last Friday and STORY154 was there!

Interior
While the venue in Oost was dark, underground and lit with candles. The Zuid venue is totally different: It’s light, spacious, has cool streetart on the walls and there is a exhibition space with a Citroën SM from 1972 in it as a reference to the former occupation of the building. And again BAUT has a huge terrace (in the sun)! BAUT ZUID is open for breakfast with croissants of Le Fournil and fresh juices, lunch and dinner.

The Food
Ok, I love Michiel’s cuisine (and he’s so nice as well!) so I may be a bit biased ;) The idea of BAUT is that each person eats about 2 to 3 dishes. There are 15 dishes in total divided over 4 food loving places: Italy, France, Asia and The Netherlands. I always tend to go for the Italian, French or Dutch dishes.
Although BAUT travelled from one part of the city to another one, the quality of the food is the same (even better!). They adjusted the menu slightly, f.e. the steak tartare can be served with duck liver. The risotto with scallops made room for a risotto with herbs and baked sea bass (sounds very good as well!). The scallops are now a French dish with cauliflower cream, foam cèpes and beurre noisette. That sounds delicious!

Hi Michelle, nice blog! The car is the restaurant is actually a Citroën SM from 1972. I know, because it’s mine :-) It used to be the Citroën showroom, that’s why I offered to lend my car.
