Former pop up restaurant BAUT of chef Michiel van der Eerde is becoming Restaurant C little by little. C stands for Celsius from warmth to cold. It also stands for approachable, dedicated, quality and service. And it’s permanent!
The Concept
When I talked to Michiel a while back for his favorite restaurants in Amsterdam, he spoke passionately about a new restaurant concept in Amsterdam that kept him busy. So simple that it would be copied immediately when people knew about it. This was Restaurant C in Amsterdam.
“Take an oyster,” says van der Eerde (in Het Parool). “That can be served raw, but also poached or fried.” They have divided the menu into twenty dishes with a variety of degrees. 20 Degrees are the raw dishes, 80 degrees for slow cooked dishes, 100 for boiled and steamed meals and 200 degrees for the grill and the tempura.
