Totally new in town is BAUT & Dreesmann on the Rokin. Moving circus BAUT by Michiel van der Eerde, reallocated to the former Vroom & Dreesmann building on this topnotch location, till December 2016. BAUT just came from the Zuidas and this is their 4th location. Of course I had to check it out!
From BAUT you can expect good quality food. And the menu lived up to my expectations! Different continents inspired the menu and everything is finished with a new twist. The interior and surroundings are dark but this is contrasted with the whole ‘light wall’ which is a long, broad window all across the side. This offers a beautiful view over the Amsterdam center and city skies. Besides the colorful art pieces of Pipsqueak Was Here!!! brightens things up.
I chose the surprise menu, with as a starter a delicious ceviche with crispy red quinoa, creamy avocado chunks and a crème of jalapeños and a passion fruit sauce, the perfect sweet, sour and creamy combination. The second dish were a juicy lambs chops with humous, citrus curd and roasted red bell pepper gravy. The service was really good and personal. Taking the time to explain everything and introducing themselves to us. The dessert were season fruit cherries with ice cream. The kitchen is open, and I always really like to see the action going on in the kitchen!
